Process: Pour Over Coffee requires few simple tools. Filtered Water is poured on top of fresh ground coffee forming to extract an even and balanced cup

Result: Pour Over is similar to everyday drip coffeemaker but noticeably more delicate and complex. A persistent pour, breezy bloom and uniform separation are key elements of a pour over

+SIPHON

Equipment: Grinder, Scale, Siphon, Filter, Burner

Process: Siphon requires absolute immersion of the freshly ground coffee beans in an apparatus comprising of two vacuum chambers and leveraging vapor pressure

Result: The process is captivating and enthralling which aids in crafting an evenly balanced cup. One of the most fascinating brewing method which desires to be witnessed for appreciating the complexity of the humble coffee bean

+COLD BREW

Brew Style: Immersion

Brew Time: 16-24 hours

Equipment: Grinder, Scale, Cold Brew Bucket, Filter, N2 Gas

Process: Cold Brew is a quick extraction setup by immersing freshly ground coffee in Cold Filtered Water. The setup allows slow separation of coffee compounds leading to a very balanced coffee seemly for all seasons. Long brewing time along with pure nitrogen infusion characterizes our nitro brew

Result: Selection of precise coffee bean variety & roast along with coarse grind size marks the foundation of this modest extraction process. With a bit of fortitude and ingenuity, a slow and cold extraction process is prepared to concoct a delicious and flavorful cup of coffee

+Aeropress

Brew Style: Immersion + Percolation

Brew Time: 2-3 mins

Equipment: Grinder, Scale, Aeropress, Filter, Kettle

Process: Aeropress is a wonderful mixture of percolation & immersion techniques in one simple coffee brewing device. Aeropress consists of two nesting cylinders with one cylinder has a flexible airtight seal and fits inside the larger cylinder. A shorter brewing cycle at high temperature extracts the best flavors from our varied range of single origin filter coffees

Result: Extraction via Air pressure brings out the complexity with balanced acidity, sweetness and bitterness from freshly ground coffee

+INFUSION

Brew Style: Immersion (Infusion)

Brew Time: 3-5 mins

Equipment: Scale, Tea Pot

Process: The oldest methods of unearthing delightful flavors by hydrating any loose leaf teas with careful selection of appropriate water temperature and volume at a preset time. Charmingly simple yet entailing careful precision of measuring and steeping every loose leaf tea variety with spring quality water results in drawing out subtle flavors. After using loose tea leaves once in the pot during first infusion, loose leaves can be used for subsequent infusions for providing eternal pleasure.

+ESPRESSO

Process: Unique extraction method by using a single origin loose leaf Green tea variety and grinding it fresh to pull a shot on our espresso machine. Chai is also incorporated with our Black Loose Leaf Tea Espresso shot.

Equipment: Scale, Cold Brew Bucket, Mesh, N2 Gas

Process: Drinks on tap accentuates the craft of brewing with perfection. Application of long brewing time to our selection of loose leaf tea varieties heightens the multitude of our tea offerings as well as inspire the extraction of complex and composed flavor notes. Infusion with pure nitrogen spawns a nitro brew tea which compliments well with our brewing variety.

+Rooibos (rojo)

Rooibos Herbal Tea is used in our rojo latte. Rooibos tea is also known as red tea or red bush tea. It is made using leaves from a shrub called Aspalathus linearis. Traditional rooibos is created by fermenting the leaves, which turns them a red-brown color. It is Caffeine-free, low in tannins and rich in antioxidants offering a variety of health benefits.

+Turmeric (Kurkuma)

Our Housemade turmeric extract is made by using fresh turmeric roots and used in our kurkuma latte. Turmeric is a flowering plant of the ginger family, Zingiberaceae. The plant is rhizomatous, herbaceous, and perennial, and is native to the Indian subcontinent and Southeast Asia, and requires temperatures between 20 and 30 °C (68 and 86 °F) and a considerable amount of annual rainfall to thrive.

+Ginger (kurkuma, chai)

Our ginger extract is made by using fresh ginger roots and used in our kurkuma, rojo & chai latte. Ginger (Zingiber officinale) is a flowering plant of family Zingiberaceae which is a herbaceous perennial which grows annual pseudostems (false stems made of the rolled bases of leaves) about a meter tall bearing narrow leaf blades. Ginger originated in the tropical rainforests from the Indian subcontinent to Southern Asia where ginger plants show considerable genetic variation.

+Spices (chai, nights watch)

Our peppercorn extract is made by using black peppercorns drupes and used in our charcoal latte. Black Pepper comes from the flowering vine family of piperaceae cultivated as a fruite, dried & used as a spice. Pepper is native to South Asia & Southeast Asia, and has been known to Indian cooking since 2000 BCE. We brew our chai latte by grinding cardamom, clove & black pepper with loose leaf tea. Cloves come from the family Myrtaceae and native to the Maluku Islands (or Moluccas) in Indonesia. Cardamom comes from seeds of several plants in genera Elettaria & Amomum in the family Zingiberaceae. Both genera are native to Indian subcontinent & Indonesia. Also incorporated in runners' high.

+charcoal (nights watch)

Activated charcoal powder is used in crafting our charcoal latte. Activated charcoal has a porous surface which means it has millions of tiny pores that can capture, bind and remove unwanted materials. It has a negative electric charge that attracts positively charged toxins and gas, that can then be carried out of the body.

We in Kafi started with a vision to create a sustainable coffee cup. We drafted a model for our coffee bar and established the following listed goals to promote sustainable brewing while protecting our surroundings. With all these steps, we hope to inspire others and pave a way for wider adoption of the model by undertakings across our industry. You can also look at our steps here.

+ Go Local

The procurement plays an important part of the model as it helps us to understand supply chain, sourcing and supplier relationships. We diligently explored, identified and interviewed local vendors & suppliers to understand their supply chain. We then carefully selected our partners who are based locally and made decisions to procure items & materials with a similar conscientious and scrupulous selection process. Sourcing locally helps in reducing our carbon footprint and impact to our surroundings. It also promotes local wealth and helps forge lasting friendships thereby generating greater sense of community.

+ Traceability

Traceability is another pillar to our model as it helps us understand the journey of our raw materials and how everything is connected in today's globally economy. We made a conscious effort to educate and inform our self and pass on the information to our customers about the items including food, wares and other materials procured and sourced through our various local suppliers and partners. Tracing items and raw materials helps us understand the impact of sourcing and trade decisions and how it impacts our ecology, environment and our choices as consumers.

+ Direct Sourcing

A model only works if we are supporting farmers and producers to make the right choices while growing our raw materials everyday. We may be able to trace our raw materials for a sustainable sourcing model but it would be of no avail if we are not supporting the people on the ground. We made sure that our partners are working with farmers and their families to make it worthwhile for them to continue their effort of following expedient agricultural practices. Global sourcing often requires comprehending complex trading laws but we expect our suppliers to ensure compensation of fair prices to the growers by collabrating directly with importers.

+ Maker Movement

We continuously reviewed our business plan to identify opportunities of hand making and fulfilling some of our material needs. We decided to craft our wellness latter recipes with ingredients where we can handmade our extracts. The ingredients were selected based on the adherence to our tracing and sourcing model. All our extracts are natural with no preservatives and enriched with locally sourced honey to add more nutrients and a bit of shelf life. We also moved forward in getting our wares hand made in east london by working directly with a talented potter and were delighted by the aesthetics and warmth of our cups.

+ Re-Lifecycle

It never occured to us that the marketplace has a wide gap in product offerings which are made from recycled material vs products which can be recycled for future use. Hence it became a challenge to only source recycled products and adapted to following philosophies, (1) source materials which can be recycled and composted such as all our take away cups and lids (though we strongly encourage to bring your own cups) (2) procure 100% recycled materials such as all our glass light fixtures, water glasses and menu/loyalty cards (3) avoid need of recycling by sourcing our Dairy in glass bottles and returning them to our supplier for reuse.

+ Re-Claim

Sometimes it is easier to mold materials to give them second chances to shine again then to recycle or worse landfill them. We are thrilled to work with the Wood Recycling Center @ St Albans who not only collect and reclaim old wood pallets and industrial wood planks but also employ people who may find it difficult to find a job. All our furniture and the coffee bar has been designed and made with reclaimed wood from the center. We were also diligent in saving and reusing materials while building our cafe and also decided to not upgrade/modify our WC to align with the cafe design as it was clean and functional.

+ Living wages

Kafi is proud to be a fully accredited living wage employer. We made a commitment to support people who are going to help us make this model viable and achievable in the long run. We want to provide a safe and enjoyable working environment along with fair wages and pensions/vacations to everyone who has committed to help us implement and execute this model on day to day basis.

+ Community Support

Our cafe is part of the community and we are making great strides to partner with non-profits and other charitable organizations in our area. We want to actively work with local organizations and start supporting them in their different visions and goals. We would encourage feedback from our customers and partners to help us achieve this goal.
